Cook the meat
• Wash your beef and Kanda• Put in a pot and add a chopped onion, 2 seasoning cubes, and salt.• Add a little water and cook until very tender.• Add stockfish and continue cooking until soft• Take off the fire and preserve the stock - 2
Prepare waterleaf
• Wash and chop your waterleaf• Put in a pot and cook for 5-10 minutes• It will produce a lot of water, do not drain. Cook in the water - 3
Build the base
• Add cooked meat, kanda, and stock into the waterleaf.• Add crayfish, remaining seasoning cubes, and pepper at this point.• Stir and let it boil for 5-10 minutes - 4
Adding eru leaves
• After washing your eru leaves, add gradually and stir very well• Cover the pot and cook on low heat for another 15-20 minutes.• Add your palm oil and smoked fish• Stir thoroughly - 5
Final Cooking
• Let it cook for 10-15 minutes again on low heat.• Stir occasionally to prevent burning at the bottom.• Taste and adjust salt.• The final texture should be thick and well combined - 6
Making Garri
• Boil your water in a clean pot• Reduce heat and gradually pour garri into the water while stirring.• Stir continuously until it is thick, smooth, and has no lumps - 7
Serving
• Mold garri into balls or cylinders• Serve hot with eru• Add extra pepper according to preference.• Bonus tip: It pairs well with red wine, or chilled sweet drinks
