    Prepare the Crab

    • Wash and clean the crab pieces thoroughly.• Crack the claws slightly so sauce can enter.• Dry with a clean towel• Heat 2 tablespoons of oil in a large pan.• Add crab pieces.• Cook for about 4 minutes until slightly red.• Remove and set aside.

    Make the Sauce

    • Add remaining oil to the pan• Sauté onions for 2 minutes.• Add ginger and garlic• Stir for about 30 seconds

    Build Flavor

    • Add blended tomatoes, tomato paste, and chili peppers.• Cook for about 10 minutes until it thickens• Add sweet chili sauce, soy sauce, oyster sauce, sugar, salt, and black pepper.• Stir very well.

    Cook the Crab in the Sauce

    • Return crab to the sauce and mix thoroughly to coat.• Cover and simmer for 12 minutes.• Slowly pour beaten eggs into the sauce while stirring gently.• Let the eggs form soft ribbons in the sauce

    • Add spring onions and parsley for garnish.• Serve with boiled white rice.
