Roast The Groundnuts
• Heat a dry pan on medium heat• Add the raw groundnuts• Roast, stirring constantly until skins loosen and groundnuts are golden• Remove from heat• Rub between hands to remove skins - 2
Prepare the Caramel
• In a clean dry pot, add the sugar and water.• Heat on medium-low without stirring• Let the sugar dissolve and start bubbling• When it turns light golden, gently swirl the pan.• DO NOT STIR WITH A SPOON - 3
Add Flavor ( Optional )
• Once the caramel is golden, add your ginger powder ( or vanilla, or whatever flavor you like )• Add a pinch of salt• Swirl quickly to mix - 4
Add Groundnuts
• Immediately add the roasted groundnuts• Stir very fast with a wooden spoon• Try to coat all groundnuts evenly before the sugar hardens. - 5
Spread & Cool
• Quickly pour onto a greased tray, or baking paper, or lightly oiled plate.• Spread thinly with a spatula• Allow to cool for about 10 minutes. - 6
Break and Serve
• Break into pieces with hands or a knife• Allow to completely cool before sealing for storage ( shelf life about 1-2 weeks if airtight at room temperature )• Enjoy
